Gobble Up Turkey Chili

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 green bell pepper, diced (optional but great for flavor)
- 3 cloves garlic, minced
- 2 cans (4 oz each) diced green chiles
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon oregano
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper (optional)
- Salt & pepper, to taste
- 3 cups cooked leftover turkey, shredded or chopped
- 2 cans (15 oz each) white beans (Great Northern or cannellini), drained & rinsed
- 1 ½ cups corn (frozen, canned, or leftover roasted corn)
- 4 cups chicken or turkey broth
- 1 cup sour cream or ½ cup sour cream + ½ cup cream cheese for extra creaminess
- Juice of 1 lime
- Fresh cilantro, chopped (optional)
Instructions
Sauté the aromatics.
In a large pot, heat olive oil over medium heat. Add onion and bell pepper and cook until soft, about 5 minutes. Add garlic and cook 1 minute more.
Add seasonings.
Stir in cumin, chili powder, oregano, paprika, cayenne, salt, and pepper. Toast the spices for 30 seconds to bring out their flavor.
Add turkey, beans, corn, and green chiles.
Stir everything together.
Pour in the broth.
Bring to a simmer and cook for 15 minutes to let the flavors blend.
Make it creamy.
Reduce heat to low. Stir in sour cream (or sour cream + cream cheese). Warm gently — do not boil, or the dairy may separate.
Finish with lime.
Add lime juice and adjust salt and pepper to taste.
Serve.
Top with cilantro, shredded cheese, diced avocado, or tortilla strips if desired.
Optional Add-ins
- 1 can white hominy (for extra corn flavor)
- 1 jalapeño or poblano, diced, sautéed with the onion
- ½ teaspoon ground coriander
- ½ cup heavy cream for richer broth
