Crock Pot Taco Soup

Ingredients
- 1 lb ground beef or turkey, browned and drained
- 1 onion, chopped (optional)
- 1 packet taco seasoning
- 1 packet ranch seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained
- 1 can (15 oz) corn, undrained
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (10 oz) Rotel (mild or hot)
- 2 cups beef broth (or chicken broth)
Instructions
- Brown the meat (unless using precooked):
- Cook ground beef or turkey with onion until browned. Drain excess fat.
- Dump everything in the Crock Pot:
- Add meat, all canned ingredients, seasonings, and broth.
- Cook:
- Low: 6–8 hours
- High: 3–4 hours
- Stir & taste:
- Adjust seasoning, add more broth if you like it thinner.

Shortcuts & Variations
- Swap ranch packet for 1 tbsp homemade ranch seasoning if avoiding packaged mixes.
